This delicious summer salad is paired best with the Traminette from Stanburn Winery. Here’s the recipe:
Strawberry and Goat Cheese Salad
Serves 2
Ingredients for the salad
1 cup spring salad mix
½ pear, cut into 4 slices
3 strawberries, sliced
¼ cup pecans, crushed
¼ cup goat cheese, crumbled
Herb Garden Vinaigrette (see below)
Directions
Place the spring mix in a large bowl.
Add the pear and strawberry slices.
Add in the pecans, cheese and then pour in dressing.
Toss to combine.
Ingredients for Herb Garden Vinaigrette
¼ cup red wine vinegar
2 tablespoons balsamic vinegar
1 tablespoon of shallots, peeled and finely chopped
2 teaspoons Dijon mustard
½ teaspoon salt
¾ cup olive oil
1 to 2 tablespoons fresh thyme, mint, oregano, or tarragon, finely chopped
2 to 4 tablespoons fresh basil, dill, chervil, or chives, finely chopped
Directions
Puree the first five ingredients in a blender or food processor, or place in a jar with a tight-fitting lid and shake.
Add in the olive oil in a stream to the vinegar mixture while running the blender or processor, or use a whisk to blend.
Add in herbs and mix again, blending the flavors together.
